What I ate Wednesday!

This past Sunday I tried a wonderful new recipe that a friend had suggested for me! I’m so excited to it share with you all, it was absolutely delicious! Since I love pumpkin and the fall, it was also very festive!


So, I made a pumpkin cake in a mug! Here are some of the main ingredients.

Ingredients:
1 tablespoon pumpkin puree
1.5 tablespoons coconut flour
1 egg + 1 egg white
1 tablespoon coconut oil
2 tablespoons canned coconut milk
1 teaspoon vanilla extract
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon baking soda
pinch of salt

Since this Pumpkin cake has no sugar in it’s recipe I encourage you to use honey! Also it came with a chocolate whip option, I personally didn’t try it, but will include the recipe for that too!
Chocolate whip ingredients:
1 tablespoon coconut butter
1 tablespoon canned coconut milk
1 teaspoon sunbutter (or nut butter)
1 teaspoon unsweetened cocoa powder
¼ teaspoon vanilla extract
pinch of salt

1) Mix all of the cake ingredients in a mug, it should look a little bit like this! 20130929_185147
2) Microwave for 1:30-2:30 minutes. While this is microwaving and cooling, mix up the chocolate whip ingredients and then add on top.
This serves recipe serves one person. Final outcome!

This is such a wonderful and festive quick and easy recipe. It’s a wonderful desert when you don’t feel like doing much, and is super filling too! Honey really adds to taste!

5 Things Friday!

I know it’s a bit late, but it’s still Friday…Therefor I declare this my Five Things Friday post!

1) School…If it’s one thing, school has taught me to keep pushing on! I’m so proud with how well I’m keeping up, staying organized, and most importantly how I’m doing overall! This is all new to me, but I don’t think I could love what I’m doing anymore than I already do!

2) Tomorrow I am super excited to be having my launch party on my Arbonne business! I finally feel it is the right time to really indulge in this great opportunity and I have wonderful people who are behind me supporting me in all of this, I don’t see any time to waste!

3) Going from texting almost no one, to texting everyone in a day..Since school started, I have seen a rapid increase in friendships. It is true that you feel good when you surround yourself with good and positive people..I have class with mostly the same people, but these girls and I have become very close. It’s nice knowing you have someone to turn to when things get rough…Also, they know exactly how hard I’m working because, well, they’re working just as hard!

4) In about 2 weeks, I will no longer be a teenager. I will be turning 20, and while I know there is not much difference between age 19 and age 20, to me there is. I already feel beyond my years because of my maturity level, and don’t get me wrong, I don’t see a problem with that. I just guess my birthdays in the past haven’t been all they’re cracked up to be..They usually end horribly. This year though, I guarantee that will be different, and that scares me a little. Age is just a number, but I’m finally starting to feel as if I’m really growing up!

5) I have a goal. My goal is to try and post more, and hopefully with some upcoming events like running in a 5K, being able to offer a giveaway, and doing some more wonderful fall recipes I’ll have good things to keep the flow going! Oh, I guess I didn’t mention the 5K! One week from tomorrow, October 5th, I will be participating in the Color Run in Allentown. I’m so pumped to be doing it! A few months ago, I could not have even run a mile, but now to be able to run 3.1 I’m ready to rock it!

What I Ate Wednesday

To start off, I would like to mention, that today 12 years ago a lot of lives were lost. I will never forget the moment in which my little third grade self found out what was happening. I will forever remember where I was and everything about that event. Four years ago, I had the joy to sing at the church next to where the twin towers stood. The church is now used as a memorial daily, and is absolutely beautiful. Not to mention, it stayed standing through the entire tragedy and housed firemen and injured workers. Being able to be so close, and have a voice while those people were mourning was such a moving experience that will never leave my mind.

Now onto some WIAW excitement! I am truly sorry for my lack of posts lately, but I had to strongly refrain myself from posting this on Sunday night…I knew this dish would make the most wonderful What I Ate Wednesday post!


We had a salon get together on Sunday afternoon to say goodbye to one of our stylists (I am a receptionist at a hair salon).  I was completely baffled at what I should make..I contemplated for days and even 24 hours prior to the event I still hadn’t decided what I was going to make, and then I settled on it. Drum-roll please….A raw vegan, and of course gluten free, cashew cheesecake is what I had decided on. Everyone loved it, even the people who don’t like healthy foods! Everyone at the party was so amazed at the taste and the ingredients, people were asking for the recipe. So here is it!

I found this delicious item on Pinterest, I usually search gluten free recipes! It’s so good I couldn’t not share the recipe with you guys!

Ingredients:

Filling: 4 Cups raw cashews, soaked (Soak in cold water for an hour, and then rinse with cold water before blending), 1 Cup filtered water, 1 Cup raw agave nectar, 1 cup melted coconut oil, 1 Tbsp raw vanilla extract, 2 tsp freshly squeezed lemon juice.

Crust: 2 Cups whole raw pecans, 1/4 Cup chopped pitted soft dates, 1/2 tsp fine sea salt.

Directions!

Filling: In a high powered blender combine the filling ingredients listed above and blend at high speed until smooth and creamy. I recommend getting the cashews blended and then proceeding to add the rest of the ingredients to the blender!

Crust: In a food processor (I don’t have one so I use my blender), pulse pecans, dates, and salt until smooth. Press into bottom of pan, ensuring that there are no gaps.

How to assemble!

Pour filling over crust and freeze for at least 2 hours or until firm in the center. Personally I froze mine overnight. This dessert can be kept in the freezer for up to one month. When ready to serve, set aside to thaw for 15-20 minutes. Can be refrigerator up to a week after being thawed.

Because it’s been too long!

Wow guys, so it’s a been awhile! I guess I’ve just been a little preoccupied with the start of school and what not! I guess I’ll go ahead and tell you all how it’s been! 

School started this week, and boy it was hectic. I’m a nursing major, and it’s a lot of work…But I know in the end it will be worth it. There’s just something that amazes me that in two years peoples lives will be in my hands. I honestly can’t wait. 

Secondly, I’m back at the beach and couldn’t be happier. It’s just what I needed after having a stressful bombarded week. 

Now onto the real interesting stuff…I’ve been having a bit of an internal conflict lately. I can’t sit still. When I’m in a house for too long I feel very claustrophobic and “cooped up”. Being cooped up makes me really frustrated and sitting around when I’m cooped up frustrates me even more. I’m not quite sure why this has all been happening lately..

Does anyone else get the cooped up feeling that I’m talking about?

5 Things Friday

Hey everyone! So I know it’s a bit late, but it’s still Friday! And first I’d like to say, my thoughts today were TGIF! This is my very first 5 things Friday post, and I’m super excited!

     1. The Beach

So after 5 and a half hours, I am finally at the beach! As I’ve said jokingly of course, it’s a good thing I really like my boyfriend otherwise that ride would have been a drag! Besides the traffic, getting here was actually really fun! We are staying with his family at their beach house, and it is such a wonderful place away from home. It’s beautiful, cozy, and filled with very loving people. I’m super excited to head down to the beach tomorrow and get on with this fun-filled weekend! Yes, unfortunately I said weekend…I will explain why I’m only here for the weekend in number2!

     2. School

School starts this week, Monday at 9 A.M. to be precise. This happens to be the reason why I’m only at the beach this weekend. However, once school ends on Friday I’m heading back down for the rest of the weekend. Back to this school topic…I’m a little nervous, but really excited as well. I’m a junior nursing major, and this is the year my clinicals start so it’s a little intimidating. Of course the first week is the hardest, being they throw the syllabus at you and say “This is your semester”. At the end of the day, all of this stress though will be worth it seeing as I’m one step closing to my dreams of helping people.

3. Healthy eating choices

So most recently I’ve been trying to maintain a healthy diet. With school coming, I’m a little worried I won’t be able to keep with this as well as I have been. Though I would just like to say that I have read multiple posts about going back to school and really planning my meals, and they have helped a ton. These posts have helped me be more relaxed and have given me more ideas on how I can really prepare myself for the changes that will be happening. I wanted to share with you some of these posts. 4. Friendship

I’m going to be honest, I wouldn’t say I have a best friend. At least not one of those friends that you see in movies that you do everything with and can talk to all the time and what not. This is something I’ve struggled with for a while, I’m just not sure how that whole thing really works. Don’t get my wrong, I really want that…But how do you just say to someone, I really enjoy hanging out with you can we be best friends? I don’t think you can say that..And even if you can, I’m way too scared too! This was a thought I had while driving today. Most of the people I know have been BFF’S since they were young, so I feel out of place. I know length of friendship truly means nothing, but it seems to me like it does. Lately there have been a few new people walking into my life and I’m wondering how to build a stronger friendship with them. I’d definitely be open to suggestions! Here’s a picture that I think is inspiring for this topic.

    5.  Music

So in high school I sang, played piano, and played guitar. I can still do all of that stuff, but with such a busy schedule I’ve been lacking in doing so and I really miss it. I still sing in the car on my way to work and anywhere really, but it’s not the same as really just taking a break and delving into music and letting myself express how I feel through music. For me, music has always had a way of helping me get back up on my feet when I was down, and encouraging me in every way possible. It was my backbone at some moments, the thing I turned to because I could really express how I felt. This quote took the words right out of my mouth!

How I prepare myself for a day

So I thought about doing a post on how I get myself ready for the day ahead of me. 

First things first, some morning it is a struggle to find the alarm and turn it off. Now don’t get me wrong, I am a total morning person, but some days I’d just rather stay in bed. In my opinion, those are the days we should try harder at making ourselves feel good.

So after I turn off that darn alarm, I take my multi vitamin. It’s permanent home is right next to my bed, along with a bottle of room temperature water. After all, you don’t want to shock your body with cold water first thing in the morning. Then I proceed to the kitchen to make myself some breakfast. Sometimes it’s cereal, I’ve been obsessed with chex right now. Pretty much all of their cereals are gluten free! Other times I make myself some oatmeal, and oatmeal with bananas and honey is my absolute favorite. Then on to brushing my teeth. For some reason, I can’t deviate from this routine unless I really need to. I hate brushing my teeth before I eat, and I hate washing my face before I brush my teeth, just in case I get toothpaste on my chin or something. So if you couldn’t tell, after brushing my teeth I wash my face. 

ImageThis is the wonderful set of products I use to wake up and revitalize my face! Everything except for the night creme that is. This is part of the Arbonne FC5 line, and really helps your face wake up. Not too mention, the day moisturizer has SPF in it. This is the one thing in the morning that is absolutely necessary for me to feel good! Then I proceed with putting on my attire, which is usually for work. I put on my makeup, let my foundation dry while I’m doing my hair, add some mascara and I’m good to go! 

Overall, it doesn’t take me long to get ready, but there are vital steps that help me prepare for the day around me. It also helps to have some relaxing and breathing time before the day becomes crazy!

13 Mile Hike

Yesterday, my boyfriend and I took an hour and a half drive up to Ricketts Glen State Park. My goal was to see all the falls, and I’ll tell you that’s exactly what we did. I’ll also tell you, we hiked a total of about 13 miles. It was absolutely beautiful! It amazes me how the rush of water can erode rocks and just how wonderful this is to our eyes. 

So now the moment I’ve been waiting to share, last night after coming home I could feel the soreness starting to make it’s way into my quads. After all, we did climb up stairs most of the time, and most of the stairs were a challenge for my little legs to get up! Knowing that I already was sore, I was getting pretty nervous for how I would feel today. However, then I had some positive thoughts on all of it.

When your muscles are sore, it means you’ve worked hard. When your muscles are sore, it means you are building more muscle. When your muscles are sore, it’s a good thing! And to top it off, I had a wonderful time and saw a lot of beautiful water falls!

Needless to say, when I woke up this morning I was sore. I’m not as sure as I expected, I can walk up stairs without being in tremendous pain. So now I’m going to enjoy my protein shake, and let the protein repair my muscle cells!
